Operations Manager Matthew Gray Davies, a fellow Barcelona alum, pulls
together the beverage and service components for Manolo by implementing
tried and true practices. Service is thoughtful without pretense, and attentive
while respectful of one’s personal dining experience. Davies also devised a
beverage program that focuses on quality, not quantity. Prior to opening
Manolo, Davies held the General Manager of Food and Beverage position at
New York City’s Saks Fifth Avenue where he executed high profile events for
designers and VIP clientele.
